If you don't already own a grain mill, we can mill most of our grains into flour for you! We charge a small milling fee of $2 per 5-pounds of grain. Hard white wheat will produce bread that is lighter in color and somewhat less dense than the hard red. Breads, rolls, and muffins can be made with either variety, or a mixture of both. WheatMontana grains are not certified organic, but they ARE chemical/pesticide/GMO free. Their wheat is tested for 125 different herbicides and pesticides and guaranteed free of all chemicals. The grains are not irradiated or pastuerized. However, soft wheat does mill into a fine, powdery flour that produces wonderful cookies, pancakes, waffles, muffins, cakes, tortillas, and batter breads. Just remember: if the recipe calls for yeast, you must use hard wheat. Otherwise, hard or soft wheat will do. Because of its lower gluten content, it is best to combine rye with some hard wheat when making bread. One of our favorite recipes uses one-third each of hard red, hard white, and rye flour. To add some variety to your table, use rye to make a wonderful loaf of pumpernickel bread. 5# bag - $9.25 Kamut is the registered trademark name for a grain that is thought to be an ancient Egyptian relative of durum wheat. It has grown in popularity because some people who are allergic to wheat have been found to be able to tolerate Kamut. It has a rich, buttery taste, and higher protein content than traditional wheat. In America, it is always grown organically since the plant is naturally resistant to pests. It is only grown in Montana and a small portion of western North Dakota. 5# bag - $7.80 Spelt is another ancient grain that is estimated to be over 8,000 years old. It has a mild, nutty flavor. In Italy, spelt is called “farro”, which is where we get the word “farina”. In the U.S., this grain is mainly grown in the Great Lakes states. Like Kamut, spelt seems to be tolerated by some who have wheat allergies. If you are allergic to wheat or gluten, ask your doctor about trying Kamut and/or Spelt. 2 ½# bag - $4.25 5# bag - $7.25 This is the perfect way to “change it up”! Our seven-grain mix contains hard red wheat, oats, triticale, rye, barley, soft white wheat, and spelt in the perfect proportions for bread-making. The ingredients are: hard red wheat, spelt, pearl barley, millet, lentils, pinto beans, great northern beans, and kidney beans. The name of this mix comes from the biblical verse Ezekiel 4:9, “take wheat, barley, beans, lentils, millet, and spelt, put them in one vessel and make them into bread for yourself”. This bread sustained Ezekiel for three hundred ninety days. Cornbread is, of course, the classic favorite, but think about adding a handful of cornmeal to any muffin, waffle, or pancake recipe to give your baked goods a flavorful crunch. Yellow corn contains more carotenoids than white; however, white corn has a lighter, more delicate taste. Just think: when you make popcorn the “old fashioned” way, all you are consuming is corn, a little oil, and salt. They cook pinto beans, flake them, and carefully dry the beans, using no additives or chemicals. What results is a product that looks a lot like bean-colored corn flakes! Flax seeds are the best plant source of omega-3 fatty acids and lignans, which are a group of chemical compounds that have antiviral, antifungal, antibacterial, and anticancer properties. In order for these nutrients to be properly absorbed by the body, the flax must be milled. A coffee grinder does a perfect job of milling these tiny seeds as the oily seeds will clog most wheat mills. Because of the high fat content of these seeds, flaxmeal should be consumed right away or frozen for up to a week. Flaxmeal can be sprinkled on yogurt or salad, and added to almost any baked goods.
