Cinnamon Rolls Print E-mail
Makes 18
 
Run 3 cups hard white wheat through grain mill.
 
Ingredients for dough:
            1 cup milk
            ½ stick (4 Tbs.) melted butter
            ½ cup natural cane sugar
            ½ tsp. sea salt
            1 egg
            half of the freshly milled hard white wheat flour
            1 Tbs. instant yeast
Ingredients for filling:
            ½ stick (4 Tbs.) melted butter
            ½ cup demerara sugar
            2 Tbs. cinnamon
 
Place all of the dough ingredients in mixer or bread machine in order listed, slowly adding the rest of the wheat flour until dough just starts to form a ball.  Run machine according to manufacturer’s directions for making dough.
 
When dough is finished, let rise in greased bowl until doubled (about an hour).  Roll dough into an 18” x 12” rectangle on a floured surface.  Brush with ½ stick melted butter.  Sprinkle with ½ cup demerara sugar and cinnamon. 
 
Roll up the dough so it is an 18” long roll.  Seal the seam by pinching the dough together.  Using dental floss, cut into 1” slices.  Place slices in greased 9” x 13” pan.
 
Let rise.  Bake at 350 degrees for 20-24 minutes.
 
May be frosted, if desired.
