Super Walnut-Berry Granola Print E-mail
This granola is wonderful as a breakfast cereal.  Try it also as a topping on yogurt or by the handful as a snack.
 
Place 4 cups rolled oats, 1 cup chopped walnuts (or almonds or pecans), 1 cup unsweetened coconut, ½ cup pumpkin seeds, 4 tablespoons milled flax seed, and 2 teaspoons cinnamon in large mixing bowl.  Stir well.
 
Mix together 3/4 cup oil, ½ cup pure maple syrup (or honey), and 1 ½ teaspoons vanilla in small bowl.  Pour over oatmeal mixture.  Stir until liquids have coated all of the dry ingredients.
 
Spread out on two parchment paper-lined cookie sheets.  Bake at 350 degrees for 10 minutes. Using a spatula, turn granola over and bake about 10 minutes more.
 
Cool slightly.  Add 1 cup dried cranberries (or raisins).  When completely cooled, store in air-tight container.
