Wonderful for a special weekend breakfast...And so easy!
2 T. butter
1 cup (approx.) sliced peeled apples
3 T. demerara sugar
1 T. cinnamon
2 large eggs
1/2 cup freshly milled flour
1/2 cup milk
1/4 tsp. salt
Heat oven to 400 degrees. Spray a pie plate with cooking spray. Put butter in pie plate and melt in microwave. Cover the bottom of the pie plate with a layer of sliced apples (it will take about a cup). Sprinkle with demerara sugar and cinnamon.
In separate bowl, whisk together remaining ingredients. Gently pour over apples. Bake in 400 degree oven for 25-30 minutes or until puffy and golden brown. Slice into wedges and serve immediately with pure maple syrup, if desired.
Serves 4 - 6.
